OUR FAMILY'S PLEDGE

At Honest Desires Farm, our family is committed to raising animals with compassion, respect, and care. Since 2012, we have raised and experienced life alongside chickens, rabbits, ducks, goats, cows, horses, and pigs, and that daily connection has shaped our belief that every creature deserves the best life possible.


We choose heritage breeds for our chickens, which take longer to grow but thrive naturally without the health problems common in conventional meat birds. From an early age, our chickens are moved onto pasture, where they enjoy sunshine, fresh air, grass, and bugs — living as nature intended.

We feed our flock with non‑GMO grains, ensuring they grow strong and healthy while contributing to wholesome meals for families like ours.


This is our pledge: to raise animals with integrity, to honor the land we steward, and to provide food that nourishes the body without compromising personal convictions.

OUR FAVORITE WAY TO COOK A WHOLE CHICKEN

Spatchcocking (also known as butterflying) is a fantastic way to cook a whole chicken. It involves removing the backbone and flattening the bird for even cooking.  We love this method because it is quick, juicy, and open to a variety of seasonings. 


Prepare the Chicken:

  • Ensure your pasture-raised chicken is fully thawed.
  • Drain it and pat it

Prepare the Chicken:

  • Ensure your pasture-raised chicken is fully thawed.
  • Drain it and pat it dry.


Spatchcock the Chicken:

  • Lay the chicken breast-side down on a working surface or roasting pan.
  • Use kitchen shears to cut along both sides of the spine and remove it.
  • Flip the chicken over (breast side up) and firmly press down on the breastbone to crack it. This helps the chicken lay flat.


Season and Roast:

  • Season the chicken with your favorite herbs, spices, and a drizzle of olive oil.
  • Roast the spatchcocked chicken in a preheated oven at 350°F.
  • Calculate approximately 20 minutes per pound of chicken weight.
  • Use a meat thermometer to check for doneness—when the breast or thigh meat reaches 165°F, it’s ready.
  • The juices should run clear, and the meat around the ankle will start to pull back from the bone.


Enjoy!

  • Serve your juicy, flavorful pasture-raised chicken with roasted potatoes and carrots from the same pan.

At Honest Desires Farm, we keep a small herd of fast-growing, well-tempered sows carefully selected for their quality. Only the nicest and quickest-growing pigs are chosen to stay in our herd, ensuring size and gentleness in future generations. Our sows are lovely Berkshire crosses, known for their excellent meat quality and calm nature.


Each sow has two litters a year, raised in individual forest pasture pens that allow her to nest, root, and behave naturally. These pens give mothers the space and freedom they need to care for their piglets while enjoying the forest environment. Outside of farrowing season, our pigs live together, keeping one another company and thriving in a social, natural setting.


We are committed to improving our herd through artificial insemination with top-quality boars, continuing to raise pigs that embody both health and temperament.

The majority of our piglets are sold as high-quality feeder pigs to other farms and families who wish to raise their own pork. These feeder pigs are strong, healthy, and well-suited for meat production, carrying forward the care and quality we put into our herd.


We also keep our own feeder pigs to raise for fall processing. Each year, we offer whole and half pig orders, providing families with wholesome, forest-raised pork. Our pigs are never kept on concrete — instead, they root in dirt and mud, forage, and enjoy being pigs. This natural lifestyle not only respects the animal but also produces pork that is flavorful, nourishing, and raised with integrity.


At Honest Desires Farm, we believe pork should reflect the way pigs were meant to live: outdoors, rooting, socializing, and thriving in the forest.
